More robust “pasta filata” stretched-curd cheeses, available natural or beech wood smoked. Many of the products are hand-made, such as the braids and the traditional piglets, whilst the smoking technique is also done traditionally to guarantee the best distinctive characteristics. The flavour is pleasant and milky, the colour is straw-yellow and the texture is typical of the product with a thin edible rind which is brown in the smoked versions.
